I loved the quiche-esque ingredients of this recipe without the hassle of a crust. I don’t have a good cake pan or pie tin so I used muffin trays instead. I loved how these came out! They’re rustic looking and I tried different combos of mushrooms, bacon bits, and chopped red bell pepper in the middle layer.
In the future I might add garlic, spinach, and other ingredients to the combo. All of them came out good though. A little chipotle sauce and some greens and chives from the garden, a little morning sun on the terrace, and it made for an indulgent breakfast.
Alba gives her strong approval as well.
